Lots of calcium, protein, and as much nutrients as I can get as I come in on the home stretch. I can’t believe we’re in the single digits for weeks left in this pregnancy. Roasted red pepper sandwich with cucumber, lettuce, and just mayo. Not the best pic, but it was really good.

Whole wheat english with some espresso-flavored peanut butter from YumButter. I got this in a Vegan Cuts subscription box – it was pretty good!

White bean salad bagel sandwich – YUM. Piled so high. The recipe for white bean salad is in the archives – just search!!

And we totally had to take dessert to go from Veggie Galaxy – chocolate cream pie for me, coconut lemon cake for him.

Digging the purple smoothies lately – just lots of blueberries with almond milk, banana, peanut butter, and flaxseed.

Pasta salad with broccoli + garlic! I shared a similar recipe in the past called Green Goddess Pasta if you’d like the recipe.

So sick this week, so I don’t have many photos of what I ate (I couldn’t even taste what I was eating!) but little girl needed something. A fast pasta salad with broccoli + white beans.

The usual for me this pregnancy – tofutti cream cheese + tomato on a whole wheat bagel. OJ because it’s all I’ve been wanting lately.

Seitan wings from Pizza J! I haven’t had anything resembling a “wing” in a long time. These were super flavorful.

The bessstttt vegan pizza from Pizza J. This has marinara, mushrooms, spinach, and Follow Your Heart vegan cheese (literally the best melty cheese ever).

I made this spaghetti squash bake on a whim and it came out way better than I expected. I’ll need to share this recipe soon! It features broccoli, gardein chik’n, and cashew cream.

Literally… Amy’s vegan mac and cheese with a side of grilled cheese. This was a very pregnant day. But side note, Chao cheese is the best for grilled cheese!
