This noodle bowl came together so beautifully and I actually couldn’t believe it because I am not always the best at these types of recipes. But my husband is a tough critic and he gave it 5 stars so… here we are! It has very quickly made its way into our monthly dinner rotation.
Don’t be afraid of the ingredient list – it looks a little intimidating, I know. There are a few parts but they come together very simply and to be honest, I prepped throughout the day so dinner came together so quickly when it was time. My daughter naps for about 90 minutes every morning so I quickly prepped the sauce in a mason jar and chopped the veggies and put in the fridge for later. Then I quickly baked the tofu and did the same. By the time dinner came around way later, all I had to do was boil the water for the 3-minute ramen noodles and toss everything else into a wok to cook down. So I swear, it is worth the bit of effort and totally doable for busy people with a little prep beforehand (morning before or even night before!)
Recipe
You will need:
For tofu:
- Firm tofu
- Oriental Five Spice
For sauce:
- 1/3 cup tamari (or soy sauce)
- 1 tbsp coconut oil
- 2 tbsp coconut sugar
- 1 tsp fresh ginger (grated)
- 1 tsp minced garlic
- 1 tsp Oriental Five Spice
- 1/4 tsp red pepper flakes
- 1 tsp sesame seeds
- 1 tbsp sriracha (optional heat)
- Salt (to taste)
For veggies/noodles:
- 2 packages of cooked Ramen noodles (no sauce packet)
- 2 cups bok choy, roughly chopped
- 1 carrot, shaved or grated into matchsticks
- 1 onion, sliced thin
- 1 can of baby corn
To make:
For the tofu:
- Preheat oven to 400 F.
- Squeeze moisture out of tofu if necessary.
- Cut into small cubes and toss with a little olive oil and Oriental Five Spice.
- Assemble on a baking sheet and let bake for 20 minutes.
- Set aside.
For the sauce:
- Add all sauce ingredients to a mason jar.
- Shake it up and set aside.
Pulling it together:
- In a wok, add a little coconut oil before adding in all your veggies.
- Sauté for about 3 minutes before adding your sauce. Continue to toss every few minutes.
- While veggies are cooking down with the sauce, prepare ramen according to package (without the sauce packet).
- Once noodles are done and veggies are cooked down, add noodles and toss well.
- Top with extra sriracha (if that is your thing) and sesame seeds. Enjoy!
