Easy and quick – if the dish fits this criteria, I am all in. It’s honestly all I have time for these days. A lot of people tend to think that eating vegan takes a lot of preparation, time, and money. That couldn’t be further from the truth. Many vegan meals consist of everyday ingredients that you already have in your fridge and pantry.

I took to Instagram stories a bit ago and asked what you guys wanted to read on here. This was a topic that was mentioned and I was pretty excited about it… because it’s a great one. And one that I’ve been asked many times before. I hope that this list of meals/recipes help you to see how easy it can be to whip something up fast.

I’ll share some breakfast, lunch, and dinner ideas (with a heavier focus on dinner… I feel like that is the pain point for most people!)
