A lot of these are from the end of last year (read: not the healthiest), but still some inspiration. But it’s basically a whole lot of oat parfaits… my new obsession.

Takeout night. Mango rolls.
Another day, another parfait. It’s my new favorite way to eat oats. This one has chocolate oats, cherries, almond butter, and some raspberries.
My sister made homemade everything bagels… and yes, they were EVERYTHING. So good.

Rice, beans, and salsa.
Black bean burrito with some salsa and rice.
Strawberry banana oats with almond butter.
Chocolate oats layered with almond butter and berries.
Lentil stew life for life.
Baked mac and cheese for dinner!

Warm oats with chocolate banana and strawberry smoothie. Topped with pb, coconut flakes, pecans, and cacao nibs. SO GOOD.
Butternut squash bread and coffee.
Oats layered with strawberries, banana, blackberries, and almond butter.
Rice, beans, steamed potato, and some cashew ranch.
Wrap with chickpea salad, kale, tomatoes, and some just mayo.
Vegan meatball sandwich.
Sweet and sour tofu with rice.
Chocolate + berry oats.
